Aspen joined the MFC team in September of 2023 after completing her Master’s degree at CU Boulder in “Sustainable Food Systems”. Her undergrad and graduate studies focused on public health, human nutrition and sustainability, and prior to MFC Aspen had experience working with other food-focused non-profits. MFC is thrilled to have Aspen as part of our organization, where she works as the Food Pantry Operations Manager and Nutrition Specialist. Her role is to support the staff and volunteers who make our food security efforts a success and to coordinate with statewide hunger relief agencies to ensure we are equipped to meet the needs of our community.

In her free time, Aspen can be found cooking, baking, swing dancing, hiking and whitewater rafting. She also admits she is “a sucker for board games”!
